IT IS OFFICIALLY SUMMER!! I cannot explain how much I love salad in hot summer days. Today I would like to share with you a great keto recipe that is easy to make and will be ready in less than 10 minutes! This recipe is also low in carbs and perfect for the hot summer day.
With cherry tomatoes, sun-dried tomato, cucumbers, red onions, grilled artichokes and feta cheese toss in with homemade sun-dried tomato vinaigrette. You can also add olives and other salad greens to your salad. Kalamata olives and lettuce works great with this recipe.
The sun-dried tomato I use for this recipe is from Jesse Tree, which is non-GMO and ready to eat. I chose the ones in oil is because it preserves the flavor of the tomato better.
Grilled artichokes are one of my favorite ingredients to add into a salad recipe, it brings great flavor and texture. My favorite one is from Italy, they use premium fresh artichokes preserved in garlic, parsley, chili and wine vinegar.
