Easy Summer Seafood Paella

Seafood Paella

Getting bored of weekend grill? How does weekend paella sounds?

Paella is a Spanish rice dish originally from Valencia, which is one of the best-known dishes in Spanish cuisine. Therefore, a lot of non-Spanish view it as Spain’s national dish.

The combinations of paella is unlimited, cook it with seafood, with chorizo, or both!

The Recipe

Seafood Paella Recipe


Prep time: 45 mins             Total time: 1 hr 15 mins

Serves 6 to 8 people

Ingredients:

– 4 cups of chicken stock or low-sodium broth
– 2 cups of fish stock or clam broth
– 1/4 teaspoon saffron threads, crumbled
– 1/4 cup extra virgin olive oil
– 1/2 cup finely chopped onion
– 3 garlic cloves, minced
– 1/2 teaspoon smoked paprika
– 2 1/4 cups of Bomba or arborio rice
– 12-ounce package cooked chorizo
– 8 large head-on shrimp
– 1 pound littleneck clams and cockles, scrubbed
– 1/2 pound mussels, scrubbed
– 1/4 cup thawed frozen peas
– Chopped parsley, for garnish

Steps:

  1.  In a medium pan, combine chicken stock with the fish stock and crumbled saffron, then bring it to a simmer.
  2.  In a 38cm paella pan, heat the olive oil. Add the onion and cook over medium heat for about 5 minutes, stirring occasionally until softened. Add the garlic and paprika and cook until fragrant for about 2 minutes. Add the rice and cook, stir for 1 minute, until it is evenly coated in the oil. Add the hot broth and stir the rice once to evenly spread it in the pan.
  3. Cook in medium heat, without stirring but rotating the pan for even cooking for about 15 minutes, until half of the liquid is absorbed. Reduce the heat o low. Nestle the chorizo and shrimp into the rice. Add the clams, turning the shrimp halfway through, until the shrimp and shellfish are cooked through and all of the liquid is absorbed, about 20 minutes. Scatter the peas on top and let it sits for 5 minutes. Garnish with parsley and serve.

Mediterranean Sun-dried Tomato Salad

IT IS OFFICIALLY SUMMER!! I cannot explain how much I love salad in hot summer days. Today I would like to share with you a great keto recipe that is easy to make and will be ready in less than 10 minutes! This recipe is also low in carbs and perfect for the hot summer day.

 

With cherry tomatoes, sun-dried tomato, cucumbers, red onions, grilled artichokes and feta cheese toss in with homemade sun-dried tomato vinaigrette. You can also add olives and other salad greens to your salad. Kalamata olives and lettuce works great with this recipe.

The sun-dried tomato I use for this recipe is from Jesse Tree, which is non-GMO and ready to eat. I chose the ones in oil is because it preserves the flavor of the tomato better.

Grilled artichokes are one of my favorite ingredients to add into a salad recipe, it brings great flavor and texture. My favorite one is from Italy, they use premium fresh artichokes preserved in garlic, parsley, chili and wine vinegar.

Oro de Genave is my choice for any recipes that call for olive oil. CampoSur is also another great option which I love.

 

Mediterranean Sun-dried Tomato Salad


Serves 2 people
Prep Time: 10 minutes                                Total Time: 10 minutes

Mediterranean Salad
Ingredients:
  • 2 cups of cherry tomatoes (halved)
  • 2 cups of cucumber (chopped)
  • 1 cup of grilled artichoke hearts (chopped)
  • 1/2 cup of sun-dried tomato (chopped)
  • 1/3 cup of red onion (sliced thinly)
  • 1/2 cup of Feta cheese (crumbled)
Sun-dried Tomato Vinaigrette Dressing
Ingredients:
  • 6 tbsp olive oil
  • 2 tbsp sun-dried tomatoes (packed in oil)
  • 4 tsp apple cider vinegar
  • 1 clove garlic
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
Instructions:
  1. To make the dressing, puree the above ingredients in a blender until smooth and emulsified.
  2. Combine salad ingredients and toss in dressing.

You can also add any kind of protein to the salad, like seafood, chicken, or tofu. Substitute feta cheese with any other kind of cheeses. The combination is unlimited.

Easy Tuna Pasta Recipe (Ready in 15 Minutes)

This Tuna Pasta Recipe is quick, healthy, delicious and comforting, with all the ingredients ready in your pantry!

The canned tuna we use here is preserved in olive oil. When compared to the ones that are preserved in water, the tuna preserved in oil is much more flavorful and tasty, which elevates the pasta dish. 

We chose the Canadian made pasta from Holista, which is a wheat-based pasta that is made with okra, lentils, barley and fenugreek. The Holista Pasta has also proven to stabilize your blood glucose levels, and provide sustained energy and help with weight control. This pasta also cooks in 3 minutes, which saves you time when you are in a rush. You can choose from spaghetti and linguine in our Holista Pasta line.

Easy Canned Tuna Pasta


Prep time : 5 minutes                                   Cook time: 10 minutes

Serving: 2

Ingredients:

  • 2 tablespoons olive oil
  • 2 large cloves minced garlic
  • 5 oz tuna
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley (chopped)
  • Salt & pepper
  • 4 oz cooked pasta

Instructions:

  1. Boil a salted pot of water for your pasta and cook it al dente according to package directions. Prep your other ingredients while it cooks.
  2. When the pasta is close to being ready, add the oil to a small pan over medium heat. Once the oil is hot, add the garlic and cook it for 30 seconds.
  3. Stir in the tuna, lemon juice, and parsley. Let it heat through.
  4. Once the pasta is done, add some of the pasta water (a couple tablespoons) to the sauce and then drain the pasta and toss with the sauce. Season with salt & pepper as needed. Optional: serve pasta with freshly grated parmesan cheese and lemon zest.

Vegetarian – serve with pan fried halloumi or a couple of fried eggs.

Vegan – use vegan mayo and serve with roast potatoes or sweet potato, or try it with pan fried eggplant ‘steaks’.
