Mediterranean Tomato Salad

The Mediterranean diet is well known for how good it is for us with this Mediterranean tomato salad being no exception.

The traditional Mediterranean diet is full of vegetables, fruits, beans, whole grains with a key inclusion of healthy fats. Olive oil is most commonly used in this diet with other healthy fats sourced from nuts, seeds and oily fish.

According to research if you are wanting to live longer and be less likely to put on weight, eating this style of traditional diet is the way to go. Lucky it is full of delicious amazing foods like this salad recipe!

With olives and olive oil being a key component to this diet it is no wonder it is held in high esteem. Olives and olive oil are a good source of several different vitamins and minerals not to mention being high in antioxidants. The good fats also contained in olives (and olive oil) help reduce and fight against inflammation in the body and reduce the risk of heart disease.

Mediterranean Tomato Salad

Ingredients

    For the salad:
  • 3 Cups Cherry tomatoes, quartered
  • 1 Cucumber, large
  • 1/4 Cup Olives
  • 1/4 Cup Green onions, thinly sliced
  • 1 Cup Celery, sliced
  • 1/4 Cup Mint, chopped
  • 3 Tab Parsley, chopped
  • 2 ea Garlic cloves, minced
  • 1 Cup Mixed lettuce leaves
    For the dressing:
  • 1/4 Cup Olive oil
  • 2 Tab Lemon juice
  • 3/4 tsp Salt
  • Black pepper, to taste

Instructions

  1. Place tomatoes in a large serving dish. Peel the cucumber. Halve lengthwise, seed & slice thinly. Add to the tomatoes.
  2. Add the remaining salad ingredients, toss & set aside.
  3. Dressing:
  4. Whisk together all the dressing ingredients in a small bowl.
  5. Pour this dressing over the salad, toss gently & refrigerate until ready to use.
